Cooking SWAMP RATS in Louisiana

We're back in Louisiana! Three years have passed since I met Skeeter Ray and we cooked Crawfish Cajun style with his secret recipe. The original plan was to catch and cook Nutria, also known as Swamp Rats. An invasive species from South America, introduced for their thick valuable fur.
